INGREDIENTS
For the Cake:
2 cups all-purpose flour
2 cups sugar
3/4 cup unsweetened cocoa powder (preferably Dutch-processed for deeper flavor)
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1 cup strong black coffee (hot)
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
For the Chocolate Frosting:
1 cup unsalted butter, softened
1 1/2 cups unsweetened cocoa powder
5 cups powdered sugar
1/2 cup milk
2 teaspoons vanilla extract
A pinch of salt
INSTRUCTIONS
Step 1: Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
Add buttermilk, coffee, oil, eggs, and vanilla to the flour mixture. Beat on medium speed until well combined. The batter will be thin.
Divide the batter evenly between the prepared pans.
Step 2: Bake the Cake
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cakes in the pans for about 10 minutes, then remove from pans to wire racks to cool completely.
Step 3: Prepare the Chocolate Frosting
In a large bowl, beat the butter until creamy.
Gradually add cocoa powder, powdered sugar, milk, vanilla extract, and salt, beating on low speed until combined. Once all ingredients are added, beat on high speed until the frosting is smooth and spreadable. Adjust the consistency with more milk or powdered sugar, if necessary.
Step 4: Assemble the Cake
If the cakes have domed on top, trim them with a knife to level. Place one cake layer on your serving plate.
Spread a layer of frosting over the first cake layer.
Top with the second cake layer and apply a crumb coat (a thin layer of frosting to seal in crumbs). Chill for about 30 minutes to set the crumb coat.
Apply the final coat of frosting over the top and sides of the cake. Use a spatula or knife to create smooth or textured patterns.
Step 5: Serve
For an extra touch, you can garnish the cake with chocolate shavings, sprinkles, or even fresh berries before serving.
Slice and serve the cake at room temperature for the best flavor and texture.
