Slow Cooker Beef Ramen Noodles

Ingredients:
• 1 pound ground beef
• 1 cup matchstick carrots
• 1 red bell pepper, sliced
• 2-3 scallions, roughly chopped
• 3 garlic cloves, minced
• ½ cup low sodium soy sauce
• ½ cup brown sugar
• 1 14.5 ounce can chicken stock
• 2 ramen noodle packets
• Sesame seeds for garnish (optional)
• Additional scallions for garnish (optional)

Directions:
1. Brown the ground beef: Cook the ground beef in a skillet on medium heat until it’s no longer pink. Drain any excess grease.
2. Transfer to the slow cooker: Put the cooked ground beef into the slow cooker.
3. Add vegetables: Toss in the matchstick carrots, sliced red bell pepper, and chopped scallions.
4. Make the sauce: Mix minced garlic, soy sauce, brown sugar, and chicken stock in a bowl until the sugar dissolves.
5. Pour sauce over ingredients: Pour the sauce mix over everything in the slow cooker, making sure it’s all coated.
6. Cook in the slow cooker: Set the slow cooker to low heat and let it cook for 4-6 hours, letting the flavors blend.
7. Add ramen noodles: About 30 minutes before serving, break the ramen noodles into the slow cooker, without using the seasoning packets. Stir well.
8. Continue cooking: Cook for another 30 minutes, stirring occasionally, until the noodles are soft.
9. Serve: Once noodles are done, serve the beef ramen hot, and if you like, sprinkle sesame seeds and extra scallions on top.
